This one is great, because not only is it cheap, easy, filling and delicious, but it takes a pretty short amount of time to make!

Chicken Tortilla Soup
Ingredients
- 2 boneless, skinless chicken breasts
- 2 cans (14.5 oz each) diced tomatoes, undrained
- 1 can (4 oz) chopped mild green chiles, drained
- 1 yellow onion, diced
- 2 cloves garlic, minced
- 3/4 cup chicken broth
- Tortilla chips
- Shredded Monterey Jack cheese

Recipe
- Put the chicken breasts - whole - in the crock pot.
- Put the chicken breasts - whole - in the crock pot.
- Mix tomatoes, chiles ,onion, garlic & chicken broth in a bowl.
- Pour the mixture over the chicken.
- Pour the mixture over the chicken.
- Cover; cook on high for 3 hours.
- Take the chicken out, shred it with some forks, put it back in the crock pot.
- Mix it all back together.
- Serve; add crushed-up tortilla chips and cheese
Cost
- ~$8.50 if you don't have any of this at home - if you have the chicken and chips at home already it's only about $5!

This one was so good. Ian and I both just about died when we tasted it for the first time. Best of all, we got home from grocery shopping at 1 and dinner was ready an hour before our typical eating time (5 pm - we eat like elderly people). Of the 3 recipes we've tried so far, this one is hands-down my favorite!
