This one was really awesome. I mean really, really awesome. I'm normally not a huge supporter of sausage, but this went above and beyond the call of duty. It was relatively inexpensive, too. Ugh. Beautiful.


Chicken Sausage with Peppers & Basil
Ingredients
- 1 tablespoon olive oil
- 1 clove garlic, minced
- 1/2 yellow onion, minced
- 1 lb. sweet or hot Italian chicken sausage
- 1 can (28 oz) whole tomatoes, drained
- Bell pepper. The recipe suggests 1/2 each of a red, yellow and orange, but I don't like peppers, so we just did 1 whole green and I picked it out and gave it to Ian.
- 3/4 cup chopped basil
- Crushed red pepper flakes, to taste
- Salt and pepper, to taste
- Hot cooked pasta (we used tri-color rotini)

Recipe
- Heat the oil in a skillet on medium heat. Add the garlic and onion, cook them until they start to get translucent.
- Cut the sausage into one-inch chunks. Put it in the skillet with the onions and cook them for about 4 minutes, until they start to brown. then put it all in the crock pot.
- Add tomatoes, peppers, basil, red pepper flakes, salt and pepper. Stir it up.
- Cook on high for 2 1/2 to 3 hours.
- Serve over pasta with a side salad.

Cost (assuming a full spice rack)
- Makes 4 servings
- ~$6
= ~$1.50 per serving.
